Grain Free, Nutrient Dense, Healthy Pancakes
Getting kids to eat healthy is QUITE the undertaking, considering most adhere to the beige foods diet (think about it.. pasta, chicken tenders, french fries). You can trick your kids into a veggie smoothie, but why not give them a breakfast staple they LOVE instead of some processed, package cereal with high sugar content and little nutritional value?
You’ve got a lot to feel good about with these whole food, healthy pancakes. Eggs provide protein, healthy fat, vitamins, and minerals from the yolk. Bananas provide complex carbs along with more vitamins. Nuts provide healthy omega-6 fats packed with flavor. Need to go nut-free? We opt for Trader Joe’s Gluten Free Flour (rice/potato flour), but feel free to use any other nut-free flour you’d like!
Version #1 is entirely GRAIN FREE - our mini pancakes made entirely of nuts, fruit, and egg! Version #2 is our Mickey Pancake - used to make bigger pancake creations, and incorporates some, if not all, rice/potato flour in place of nuts.

Mini Pancake Version
1 med-large ripe banana
1 egg if med banana, 2 eggs if large banana
ÂĽ cup almond meal
Optional: handful of walnuts (lower almond meal content to 2 tbsp if used)
Olive oil
Mickey Pancake Version
1 med-large ripe banana
1 egg if med banana, 2 eggs if large banana
2 tbsp almond meal + 2 tbsp gluten free flour (sub ÂĽ cup rice/wheat/potato flour for nut-free versions)
Olive oil
Steps
Turn burner to medium-low & coat with olive oil (an already hot pan is essential!)
Blend ingredients for 15-20 sec.
SLOWLY pour onto skillet (see photo for optimal size, any bigger breaks up)
Flip after bubbles start to come through (approx. 2 min.)
Serve & enjoy
The Finished Product
Since a ripe banana has a higher sugar content, you’ll find that the maple syrup isn’t necessary, therefore making this healthy pancake even less sugar! Your kiddos are enjoying nut, egg, and fruit. Freakin peace of mind as a parent!
